Since the very beginning, man has known to eat. As knowledge evolved, he soon found that by eating different foods he could cure different ailments such as pains or fever. Thus was born herbal medicine, and the dawn of the age of vitamins was upon us.

As science and discovery progressed, man was able to make more observations on his environment. In 1880, Christian Eijkman, a scientist, discovered that a condition, beriberi, was actually caused by a vitamin B1 deficiency, and could be treated by feeding unpolished rice versus the polished kind (which is higher in thiamin). When his laboratory chickens came down with similar symptoms, he was able to treat them with simple changes in their diets. Overall, he was able to improve their health, proving a link between diet and the body. This led into the research of vitamins, deficiencies, and their influences on human health.

Later on, Eijkman worked with Frederick Hopkins doing further research. In 1929, the two won the Nobel Prize in Physiology or Medicine for the discovery of vitamins. At this time, vitamins were defined as substances that are needed for life and that the body cannot make on its own. It was a major breakthrough in our understanding of how the human body works.

Cashmir Funk coined the term 'vitamine' a few years later. The first half 'vita' because they were 'vital' for life, and the second half 'mine' because the thiamine in the rice used in Eijkman's experiments contained nitrogen, also known as 'amine'. The 'e' was later dropped as further scientific studies synthesized all of the vitamins and proved that not all of them contained nitrogen. The term 'vitamin' stuck.

They can be taken in large amounts without concern for toxicity, as any unutilized water soluble vitamins are flushed from the system.

Today, what most people think of when they think of vitamins are nutritional supplements, generally taken in pill or liquid form. These are concentrated versions of the vitamins themselves, being first extracted from foods or are produced synthetically in a laboratory.
